    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot, and cook according to the rice cooker's instructions or bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes. Once cooked, let it sit covered for 10 minutes.

    Season the Sushi Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice using a wooden spatula. Allow the rice to cool to room temperature.

    Slice the Hamachi

    Using a sharp knife, slice the fresh Hamachi into thin, bite-sized pieces (about 1/4 inch thick).

    Shape the Nigiri

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape. Place a slice of Hamachi on top of the rice, pressing gently to adhere.

    Plate the Hamachi nigiri and serve with a dollop of wasabi and a small bowl of soy sauce for dipping.
