1. Prepare the Prawns
Start by cleaning the spot prawns. Rinse them under cold water and remove the heads if desired. Pat them dry with a paper towel.
2. Blanch the Prawns
Bring a pot of salted water to a boil. Add the cleaned prawns and cook for 1-2 minutes until they turn pink and opaque. Do not overcook.
3. Cool the Prawns
Immediately transfer the cooked prawns to a bowl of ice water to stop the cooking process. Let them cool for a few minutes, then drain.
4. Prepare the Sauce
In a small bowl, mix the lemon juice, wasabi paste, and soy sauce together to create a dipping sauce.
5. Serve
Plate the cooled spot prawns and drizzle with the dipping sauce. Garnish with microgreens and serve immediately.
