Prepare the Wagyu
Slice the Wagyu beef into thin strips, about 1/4 inch thick. Season lightly with salt and pepper.

Heat the Hot Rock
Preheat a smooth, flat stone or a hot rock grill to a high temperature.

Sear the Beef
Once the rock is hot, place the sliced Wagyu beef on the rock. Sear each side for about 30 seconds to 1 minute depending on desired doneness.

Prepare the Sauce
In a small bowl, mix the barrel-aged ponzu sauce and yuzu kosho together. Adjust seasoning if necessary.

Serve
Serve the seared Wagyu with the ponzu-yuzu kosho sauce on the side. Squeeze fresh lemon juice over the beef before eating.
