Prepare the Kimchi
In a large mixing bowl, combine the chopped apples, napa cabbage, grated carrots, Korean red pepper flakes, minced garlic, grated ginger, fish sauce, sugar, and a pinch of salt. Mix well until all ingredients are evenly coated. Cover and let it sit at room temperature for at least 2 hours or refrigerate overnight for better flavor development.
Cook the Wagyu
Season the Australian Wagyu beef with smoked paprika, salt, and black pepper. Heat the cooking oil in a skillet over high heat. Sear the Wagyu for about 3-4 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from heat and let rest for a few minutes.
Serve
Slice the rested Wagyu beef thinly and plate it. Serve alongside the smoked apple kimchi. Enjoy the flavors together!
