Prepare the Pork Belly

Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crisscross pattern, then rub with olive oil, salt, and pepper. Place the pork belly in a roasting pan, skin side up.

Roast the Pork Belly

Roast in the preheated oven for about 2.5 to 3 hours, until the meat is tender and the skin is crispy. Allow to rest for 15 minutes before slicing.

Make the Corn Relish

In a bowl, combine corn, red bell pepper, red onion, cilantro, lime juice, and salt. Mix well and set aside.

Prepare the Aji Amarillo Creme Fraiche

In a small bowl, mix together creme fraiche, aji amarillo paste, and lime juice until smooth.

Serve

Slice the pork belly and serve with corn relish, fresh blackberries, and a drizzle of aji amarillo creme fraiche.
