1. Prepare the Carrots

Preheat your grill to medium heat. Peel the carrots and slice them lengthwise into halves or quarters depending on their thickness.

2. Make the Miso Glaze

In a small bowl, mix the miso paste with olive oil until smooth. Add salt and black pepper to taste.

3. Grill the Carrots

Brush the miso glaze over the cut sides of the carrots. Place them on the grill, cut side down, and grill for about 5-7 minutes until they have nice grill marks.

4. Turn and Finish Cooking

Flip the carrots and grill for an additional 5-7 minutes until they are tender but still have a slight crunch.

5. Prepare the Walnut Topping

While the carrots are grilling, chop the walnuts and mix them with the smoked ricotta cheese and chopped parsley in a bowl.

6. Serve

Once the carrots are done, remove them from the grill and serve topped with the walnut and smoked ricotta mixture.
