Prepare the Shrimp
Pat the shrimp dry with paper towels to remove excess moisture. This helps the batter adhere better.

Make the Tempura Batter
In a large bowl, mix the all-purpose flour, cornstarch, baking powder, and salt. Gradually add ice water to the dry ingredients, stirring gently until just combined. Do not overmix; the batter should be lumpy.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Shrimp
Dip each shrimp into the batter, allowing excess to drip off, and carefully place them in the hot oil. Fry in batches to avoid overcrowding. Cook for 2-3 minutes or until the shrimp are golden brown and crispy.

Drain and Serve
Remove the shrimp with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve immediately with dipping sauce.
