Prepare the Ingredients

Wash the bok choy thoroughly under cold water and chop it into bite-sized pieces. Halve the cherry tomatoes and roughly chop the cilantro. Mince the garlic.

Toast the Cashews

In a dry skillet over medium heat, add the cashews and toast them for about 5 minutes, stirring frequently until they are golden and fragrant. Remove from the heat and set aside.

Sauté the Garlic

In the same skillet, add the olive oil and minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

Cook the Bok Choy

Add the chopped bok choy to the skillet and stir-fry for 3-4 minutes until the bok choy is tender but still vibrant green.

Add Tomatoes and Season

Stir in the cherry tomatoes, soy sauce, salt, and black pepper. Cook for an additional 2 minutes until the tomatoes are slightly softened.

Finish and Serve

Remove from heat and stir in the toasted cashews and fresh cilantro. Serve warm.
