Preparation

    Prepare the Marinade

    In a bowl, combine soy sauce, grated ginger, sesame oil, honey, and rice vinegar. Whisk well until honey is fully dissolved.

    Marinate the Tuna

    Place the bluefin tuna loin in the marinade and let it sit for at least 30 minutes in the refrigerator.

    Sauté the Maitake Mushrooms

    In a skillet over medium heat, sauté maitake mushrooms in a drizzle of sesame oil until golden brown and tender, about 5-7 minutes. Set aside.

    Sear the Tuna

    Heat a skillet over high heat. Remove the tuna from the marinade (reserve the marinade) and sear the tuna for about 1-2 minutes on each side, until the outside is browned but the inside remains rare.

    Slice the Tuna

    Remove the tuna from the skillet and let it rest for a few minutes. Then, slice it thinly against the grain.

    Plate the Dish

    On a serving platter, arrange the sliced tuna and sautéed maitake mushrooms. Drizzle with the reserved marinade and sprinkle with toasted sesame seeds.
