Directions
Prepare the Pasta
Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly golden. Gradually whisk in the milk, stirring constantly until thickened. Stir in the cream cheese and cheddar cheese until melted and smooth. Season with salt and pepper.
Combine Ingredients
In a large mixing bowl, combine the cooked macaroni with the cheese sauce and jalapeno popper ranch dressing. Gently fold in the house-smoked brisket and crumbled bacon.
Assemble the Dish
Transfer the mac and cheese mixture to a baking dish. Top with crumbled tater tots, fried jalapenos, and sliced green onions.
Bake
Preheat the oven to 350°F (175°C). Bake the assembled dish for 20-25 minutes until heated through and the top is golden.
Serve
Let cool for a few minutes, then serve warm and enjoy your Popper Mac & Cheese!
