1. Cook the Penne
Bring a large pot of salted water to a boil. Add the penne noodles and cook according to package instructions until al dente. Drain and set aside.
2. Prepare the Chicken
Rub the chicken breasts with Cajun seasoning, salt, and black pepper. Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until fully cooked. Remove from skillet and let rest before slicing.
3. Sauté the Vegetables
In the same skillet, add more olive oil if necessary. Sauté the chopped bell pepper, onion, and cherry tomatoes for about 5-6 minutes until tender.
4. Make the Cajun Ranch Sauce
Reduce the heat to low and add the ranch dressing and heavy cream to the skillet with the vegetables. Stir to combine and simmer for a few minutes until the sauce thickens slightly.
5. Combine Everything
Add the cooked penne noodles to the skillet and toss to coat in the Cajun Ranch cream sauce. Adjust seasoning with salt and black pepper to taste.
6. Serve
