Prepare Tuna Mixture

    Combine Ingredients

    In a large mixing bowl, combine the drained albacore tuna, diced celery, finely chopped onion, mayonnaise, salt, black pepper, garlic powder, and paprika. Mix well until all ingredients are evenly incorporated.

Prepare Cool Spice Sauce

    Mix Sauce

    In a small bowl, mix together Greek yogurt, hot sauce, lemon juice, and chopped cilantro. Stir until well combined. Adjust seasoning to taste and set aside.

Assemble and Grill

    Prepare Bread

    Spread softened butter on one side of each slice of sourdough bread. On the unbuttered side, sprinkle minced garlic evenly.

    Build the Towers

    On the unbuttered side of two slices of bread, generously pile the tuna mixture. Top each with shredded cheddar cheese and avocado slices. Place the other two slices of bread on top, buttered side up.

    Grill

    Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted.

Serve

    Plate and Enjoy

    Remove the sandwiches from the skillet and let them cool slightly before cutting them in half. Serve with the cool spice sauce on the side for dipping.
