Patty Preparation

Soak the Peas

Rinse the dried green peas and soak them in water overnight or for at least 8 hours. Drain and set aside.

Cook the Sweet Potato

In a pot, boil the diced sweet potato in salted water until tender, about 10-15 minutes. Drain and mash until smooth.

Combine Ingredients

In a large mixing bowl, combine the soaked peas, mashed sweet potato, garbanzo beans, corn, chopped onion, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper.

Mix and Form Patties

Using a fork or potato masher, mix the ingredients until well combined. Gradually add breadcrumbs until the mixture holds together. Form into patties about 1/2 inch thick.

Cook the Patties

Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.

Sauce Preparation

Prepare Cashew Curry Sauce

In a blender, combine soaked cashews, curry powder, and water. Blend until smooth. Adjust the consistency with more water if needed.

Assembly

Assemble the Burger

On each burger bun, place a lettuce leaf, add a patty, top with onion marmalade, and drizzle with cashew curry sauce. Serve immediately.
