Preparation

1. Prep the Potatoes

Preheat your oven to 400°F (200°C). Wash and peel the Russet potatoes, then slice them into 1/4-inch thick rounds.

2. Season the Potatoes

In a large bowl, toss the potato slices with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated.

3. Layer the Potatoes

In a greased baking dish, start layering the potato slices in a circular pattern. Try to create a tower-like structure, stacking the slices on top of each other.

4. Prepare the Cheese Mixture

In a mixing bowl, combine the shredded cheddar cheese and cream cheese. Mix until smooth and well combined.

5. Add Cheese between Layers

As you build the potato tower, spread a thin layer of the cheese mixture between every few layers of potatoes.

6. Bake the Tower

Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

7. Finish Baking

Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.

Remove the potato tower from the oven and let it cool for a few minutes. Garnish with chopped chives and serve with sour cream on the side.
