Prepare the Patty
Cook the Mushrooms
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped mushrooms and sauté for about 5-7 minutes until they are browned and the moisture has evaporated. Remove from heat and let cool.
Mix the Patty Ingredients
In a large mixing bowl, combine the roasted rice, sautéed mushrooms, shredded Gouda cheese, garlic powder, onion powder, cumin, salt, and black pepper. Mix well until all ingredients are evenly combined.
Form the Patties
Divide the mixture into four equal portions and shape each portion into a patty, about 1 inch thick. Place the patties on a plate and refrigerate for 30 minutes to help them firm up.

Grill the Patties
Place the patties on the grill and cook for about 5-6 minutes on each side or until they are golden brown and heated through. Make sure the cheese is melted.

While the patties are grilling, prepare the toppings. Wash and dry the lettuce leaves, and set aside. If you haven't already, prepare the onion marmalade and truffled mushrooms.
