    Combine Tuna Mixture Ingredients

    In a large mixing bowl, combine the albacore tuna, diced celery, chopped onion, sliced green olives, mayonnaise, Dijon mustard, salt, black pepper, and garlic powder. Mix well until all ingredients are evenly combined.

Cool Spice Sauce Preparation

    Make the Cool Spice Sauce

    In a small bowl, whisk together the Greek yogurt, hot sauce, lemon juice, chopped cilantro, and salt until smooth and well combined. Set aside.

Sandwich Assembly and Cooking

    Prepare the Bread

    Spread butter or olive oil on one side of each slice of bread. Heat a skillet or griddle over medium heat.

    Assemble the Sandwich

    On the unbuttered side of two slices of bread, layer a generous amount of the tuna mixture, followed by a sprinkling of shredded cheddar cheese and slices of avocado. Top with the remaining slices of bread, buttered side facing out.

    Place the assembled sandwiches on the heated skillet. Grill for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
