Method

Marinating the Steak

1

Prepare the Marinade

In a bowl, whisk together grated ginger, minced garlic, plum sauce, soy sauce, and lime juice until well combined.

2

Marinate the Skirt Steak

Place the skirt steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 hours for maximum flavor.

Cooking the Steak

3

Preheat the Grill

Preheat your grill or grill pan to medium-high heat.

4

Grill the Steak

Remove the steak from the marinade, letting any excess drip off. Grill the steak for about 4-6 minutes on each side for medium rare, or until it reaches your desired doneness. Let it rest for 5 minutes before slicing.

Cooking the Eggs

5

Heat the Pan

In a skillet, heat the olive oil or butter over medium heat.

6

Cook the Eggs

Crack the eggs into the skillet. Cook to your desired doneness (sunny side up, over easy, or scrambled). Season with salt and pepper to taste.

Serving

7

Plate the Dish

Slice the rested steak against the grain. Serve alongside the cooked eggs. Garnish with chopped green onions and cilantro if desired.
