    Place the rice sticks in a bowl and cover with hot water. Let them soak for about 10 minutes or until they are soft. Drain and set aside.

Preparation of Salad Ingredients

    Prepare Vegetables and Fruits

    While the rice sticks are soaking, prepare the vegetables and fruits. Peel and julienne the carrots, dice the tomatoes, shred the red cabbage, and chop the seasonal fruit into bite-sized pieces.

Making the Dressing

    Combine Dressing Ingredients

    In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, ground Szechuan peppercorns, honey, minced garlic, and grated ginger until well combined. Adjust the seasoning to taste.

Assembling the Salad

    In a large bowl, combine the soaked rice sticks, diced tomatoes, julienned carrots, shredded red cabbage, chopped seasonal fruit, and bean sprouts. Drizzle the dressing over the salad and toss gently to combine.
