Enchiladas Preparation

    Prepare the Tortillas

    Warm the corn flour tortillas in a skillet over medium heat for about 30 seconds on each side until pliable.

    Assemble the Enchiladas

    Place about 1/4 cup of pulled pork in the center of each tortilla, sprinkle with a bit of shredded jack cheese, and roll up tightly.

    Arrange in Baking Dish

    Place the rolled enchiladas in a greased baking dish seam-side down. Pour mole sauce evenly over the top and sprinkle remaining jack cheese.

    Bake

    Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until heated through and cheese is melted.

Refried Pintos Preparation

    Sauté Onions and Garlic

    In a skillet, heat vegetable oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent, about 5 minutes.

    Cook the Beans

    Add the pinto beans, salt, and cumin to the skillet. Cook while mashing the beans slightly with a fork until heated through and slightly creamy, about 10 minutes.

    Cook the Eggs

    In a non-stick skillet, melt butter over medium-low heat. Crack the eggs into the skillet and cook until whites are set but yolks are still slightly runny, about 4-5 minutes. Season with salt to taste.
