Prepare the Filling

    Sauté the Vegetables

    In a medium skillet over medium heat, add a small amount of butter. Once melted, add the diced onion and bell pepper. Sauté for about 3-5 minutes until the vegetables are tender and the onions are translucent.

    Add the Ham

    Add the diced Applewood smoked ham to the skillet with the sautéed vegetables. Cook for an additional 2-3 minutes until the ham is heated through. Remove the filling from the skillet and set aside.

Cook the Omelet

    Whisk the Eggs

    In a bowl, whisk together the 3 eggs, salt, and black pepper until well combined and slightly frothy.

    Heat the Skillet

    In the same skillet used for the filling, add 1 tablespoon of butter and heat over medium-low heat until the butter is melted and begins to foam.

    Pour in the Eggs

    Pour the egg mixture into the skillet, tilting the pan to ensure even coverage. Allow the eggs to cook undisturbed for about 2-3 minutes until the edges begin to set.

    Add the Filling

    Once the edges are set, add the sautéed vegetable and ham mixture evenly over one half of the omelet. Sprinkle the shredded cheddar cheese on top of the filling.

    Fold the Omelet

    Using a spatula, carefully fold the other half of the omelet over the filling. Let it cook for an additional 1-2 minutes to melt the cheese and ensure the center is cooked through.

    Serve

    Gently slide the omelet onto a plate. Cut in half if desired and serve hot.
