Chorizo and Eggs

    Cook the Chorizo

    In a skillet over medium heat, add the chorizo sausage. Cook for about 5-7 minutes or until fully browned and cooked through, breaking it apart with a spatula.

    Scramble the Eggs

    In a bowl, crack the eggs and whisk them together. Once the chorizo is cooked, reduce the heat to low and add the eggs to the skillet. Stir gently until the eggs are just set, about 3-4 minutes.

    Add Vegetables

    Stir in the chopped red onion, cilantro, and diced jalapeno. Season with salt and black pepper to taste. Cook for an additional 1-2 minutes until the veggies are slightly softened.

Refried Beans

    Prepare the Beans

    In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Cook the Beans

    Add the canned pinto beans (drained and rinsed) and cumin powder to the saucepan. Mash the beans with a potato masher or fork until desired consistency is reached. Cook for 5-7 minutes, stirring occasionally. Season with salt to taste.

Hollandaise Sauce

    Prepare the Sauce

    In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens, about 3-5 minutes.

    Add Butter

    Slowly drizzle in the melted unsalted butter while whisking continuously. Keep whisking until the sauce is thickened and smooth. Season with salt to taste.
