Marinate the Mushrooms

In a bowl, mix together the miso paste, soy sauce, and maple syrup. Slice the king oyster mushrooms into thick scallop-like pieces and add them to the marinade. Let marinate for at least 30 minutes.

Prepare the Sweet Potato Purée

Peel and chop the sweet potatoes into cubes. Boil them in salted water until tender, about 15 minutes. Drain and transfer to a blender. Add coconut milk, salt, and black pepper, and blend until smooth. Adjust seasoning as needed.

Cook the Mushroom Scallops

Heat olive oil in a skillet over medium-high heat. Remove the mushrooms from the marinade (reserve the marinade) and sear them in the skillet for about 3-4 minutes on each side until golden brown. Pour the reserved marinade into the skillet and cook for an additional minute.

Serve

On a plate, spoon a generous amount of sweet potato purée. Arrange the mushroom scallops on top and garnish with chopped chives.
