    Prepare the Shrimp

    In a shallow dish, combine flour, salt, and black pepper. In another dish, beat the eggs. In a third dish, mix together shredded coconut and panko bread crumbs.

    Coat the Shrimp

    Dip each shrimp first into the flour mixture, shaking off any excess. Then, dip into the beaten eggs, and finally coat with the coconut and panko mixture, pressing lightly to adhere.

    Heat the Oil

    In a large, deep skillet or pot, heat the oil over medium-high heat until hot (about 350°F or 175°C).

    Fry the Shrimp

    Carefully add the coated shrimp to the hot oil in batches, being careful not to overcrowd the pan. Fry until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.

    Serve

    Serve the coconut shrimp warm with sweet Thai chili sauce for dipping.
