Directions for Garlic & Herb Half Chicken

1. Prepare Garlic Herb Butter

In a bowl, combine softened butter, minced garlic, chopped parsley, thyme leaves, lemon juice, salt, and pepper. Mix well until all ingredients are incorporated.

2. Prepare the Chicken

Preheat your oven to 400°F (200°C). Pat the half chicken dry with paper towels. Rub the chicken all over with olive oil, and season generously with salt and black pepper.

3. Sear the Chicken

Heat a large oven-safe skillet over medium-high heat. Once hot, place the chicken skin-side down in the skillet and sear for about 5-7 minutes until the skin is golden brown and crispy.

4. Add Garlic Herb Butter

Flip the chicken over, then spread the garlic herb butter mixture generously over the top of the chicken.

5. Roast in the Oven

Transfer the skillet to the preheated oven and roast for 25-30 minutes or until the internal temperature reaches 165°F (75°C).

6. Serve

Remove the chicken from the oven and let it rest for 5 minutes before carving. Serve with your choice of side.
