    Prepare the Mushrooms

    In a bowl, combine shiitake mushrooms with olive oil, salt, and pepper. Let them marinate for at least 15 minutes.

    Grill the Mushrooms

    Preheat the grill to medium-high heat. Grill the marinated shiitake mushrooms for about 5-7 minutes per side until they are tender and have nice grill marks.

    Add Al Pastor Sauce

    Brush the grilled mushrooms with Al Pastor sauce and allow them to cook for an additional 2 minutes. Add the diced pineapple to the grill for the last minute to caramelize slightly.

    Warm the Tortillas

    While the mushrooms are grilling, warm the corn tortillas on a separate grill or in a skillet over low heat until they are pliable.

    Assemble the Tacos

    Place the grilled shiitake mushrooms and pineapple on each warm tortilla. Top with pickled red onion, chopped cilantro, crumbled cotija cheese, and a drizzle of salsa verde.
