Prepare the Salmon

In a small bowl, mix together soy sauce and grated ginger. Marinate the salmon fillets in this mixture for at least 15 minutes.

Cook the Salmon

Heat a non-stick skillet over medium heat. Add a little oil and cook the marinated salmon for about 4-5 minutes on each side or until cooked through. Remove from the pan and set aside.

Stir-fry the Rice

In the same skillet, add sesame oil. Once hot, add the cooked rice, breaking up any clumps. Stir-fry for about 3-4 minutes.

Add Vegetables

Add bean sprouts and edamame to the rice, stir-frying for another 2-3 minutes. Season with soy sauce, chili flakes, salt, and pepper to taste.

Cook the Eggs

In a separate pan, fry the eggs sunny-side up to your liking.

Serve

Divide the fried rice among plates, top with the glazed salmon, and place a sunny-side up egg on each serving. Garnish with sliced green onions.
