1. Boil the Eggs

Place the eggs in a pot and cover with cold water. Bring to a boil over medium-high heat, then cover and remove from heat. Let sit for 12-14 minutes.

2. Cool and Peel

Transfer the eggs to a bowl of ice water to cool for about 5 minutes. Once cooled, gently tap the eggs on a hard surface and peel them.

3. Prepare Filling

Slice the peeled eggs in half lengthwise and remove the yolks. Place the yolks in a bowl and mash them with a fork. Add mayonnaise, sweet relish, Dijon mustard, paprika, salt, and black pepper. Mix until smooth.

4. Fill the Eggs

Spoon or pipe the yolk mixture back into the egg whites.

5. Garnish and Serve

Sprinkle paprika on top and garnish with chopped chives if desired. Serve immediately or refrigerate until ready to serve.
