Prepare the Pork
Trim excess fat from the pork shoulder and pat it dry with paper towels.
Make the Rub
In a bowl, combine paprika, brown sugar, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well.
Season the Pork
Rub the spice mixture all over the pork shoulder, ensuring it is well coated.
Prepare the Pit
Preheat your pit or smoker to 225°F (107°C) and make sure you have enough wood chips for overnight cooking.
Cook the Pork
Place the seasoned pork shoulder in the pit and cook for approximately 10-12 hours, or until the internal temperature reaches 195°F (90°C).
Rest the Pork
Remove the pork from the pit, wrap it in foil, and let it rest for about 1 hour.
Pull the Pork
Using forks or your hands, shred the pork into bite-sized pieces. Discard any bones and excess fat.
Add Liquid
Mix the pulled pork with apple cider vinegar and water to keep it moist and add flavor.
Serve
Serve the pulled pork as is, or with your favorite barbecue sauce.
