Preparation
Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick rounds. Sprinkle both sides with salt and let sit for 10 minutes.
Set Up Breading Station
In three separate bowls, place the flour, buttermilk, and cornmeal mixed with black pepper. Dredge each tomato slice first in flour, then dip in buttermilk, and finally coat with cornmeal.
Fry the Tomatoes
In a large skillet, heat the vegetable oil over medium-high heat. Fry the breaded tomato slices in batches for about 3-4 minutes on each side or until golden brown. Drain on paper towels.
Prepare the Vinaigrette
In a small bowl, whisk together the olive oil, balsamic vinegar, and chopped roasted red peppers until well combined.
Assemble the Dish
Arrange the fried green tomatoes on a serving plate, crumble goat cheese over the top, add fresh basil leaves, and drizzle with the roasted red pepper vinaigrette.
