Preparation and Assembly

Prepare the Fries

Wash and cut the Russet potatoes into fry shapes. Rinse in cold water and pat dry.

Fry the Potatoes

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt.

Make Pimento Cheese

In a mixing bowl, combine shredded cheddar cheese, cream cheese, diced pimentos, garlic powder, onion powder, cayenne pepper, and salt. Mix until well blended.

Prepare Pulled Pork

If using leftover pulled pork, mix it with BBQ sauce in a saucepan over medium heat until warmed through.

Make BBQ Ranch Dressing

In a small bowl, mix ranch dressing and BBQ sauce until combined.

Assembly

On a serving plate, layer the fries, pimento cheese, pulled pork, and drizzle with BBQ ranch dressing. Top with sliced scallions.
