    Make the Dough

    In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the cold water, a tablespoon at a time, until the dough comes together. Divide the dough into two balls, flatten them into discs, wrap in plastic, and refrigerate for at least 30 minutes.

    Prepare the Filling

    In a bowl, combine the seasonal fruit, sugar, cinnamon, and lemon juice. Mix well and set aside.

    Shape the Hand Pies

    On a lightly floured surface, roll out one disc of dough to about 1/8 inch thick. Cut out circles using a cookie cutter or a glass (about 4-5 inches in diameter). Place a tablespoon of filling on one half of each circle. Fold the dough over to form a semi-lunar shape and seal the edges with a fork.

    Fry the Hand Pies

    In a deep skillet or pot, heat oil over medium heat. Once hot, carefully add the hand pies in batches, frying for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
