    In a medium saucepan, combine the sugar, flour, and salt. Gradually whisk in the milk and cook over medium heat, stirring constantly until the mixture thickens and begins to bubble.

    Combine Egg Yolks

    In a separate bowl, lightly beat the egg yolks. Once the pudding mixture has thickened, gradually whisk a small amount of the hot mixture into the egg yolks to temper them. Then, pour the egg yolk mixture back into the saucepan.

    Finish the Pudding

    Continue cooking the pudding over low heat for another 2-3 minutes, stirring constantly. Remove from heat and stir in the vanilla extract.

    Layer the Pudding

    In a serving dish or individual cups, layer slices of bananas, then a layer of vanilla wafers, followed by a layer of pudding. Repeat the layers until all ingredients are used, finishing with pudding on top.
