Prepare the Pork
Rub the pork shoulder with salt, black pepper, and paprika. Place in a slow cooker or smoker and cook until tender (about 8-10 hours on low or 6-8 hours on high).

Make the Sauce
In a bowl, mix together apple cider vinegar, ketchup, brown sugar, hot sauce, and additional black pepper. Adjust seasoning to taste.

Chop the Pork
Once the pork is cooked, remove it from the cooker and let it rest for a few minutes. Chop or shred the meat into bite-sized pieces.

Combine with Sauce
Mix the chopped pork with the prepared BBQ sauce until well coated.

Plate the chopped BBQ with a side of coleslaw, cornbread, and pickles.
