    Prepare the Candied Carrots

    In a saucepan over medium heat, combine the sliced carrots and sugar. Stir until the sugar is dissolved and the carrots are tender, about 10 minutes. Remove from heat and set aside.

    Cook the Greens

    In a separate pot, blanch the cabbage and collard greens in salted boiling water for about 3-4 minutes. Drain and set aside to cool.

    Assemble the Soul Rolls

    Lay an egg roll wrapper on a clean surface. Place a tablespoon of chopped BBQ, a tablespoon of cabbage, a tablespoon of collard greens, and a tablespoon of candied carrots in the center of the wrapper. Fold the bottom corner up, then fold the sides in, and roll tightly to enclose the filling.

    Fry the Soul Rolls

    Heat oil in a deep frying pan over medium-high heat. Once hot, gently place the soul rolls in the oil, frying until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.

    Serve the BBQ Soul Rolls warm with Oak Island sauce and pepper jelly on the side for dipping.
