Penne Al Funghi Ingredients
Method
Penne Al Funghi Directions
Cook the Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the shallots and garlic, sautéing until soft and translucent, about 3-4 minutes.
Add Sherry
Pour in the sherry and let it simmer for about 2-3 minutes, allowing the alcohol to evaporate and the flavors to concentrate.
Make the Cream Sauce
Stir in the heavy cream, salt, and black pepper. Let the sauce simmer for another 3-5 minutes until it thickens slightly.
Combine with Pasta
Add the cooked penne to the skillet, tossing to coat the pasta in the sauce. Cook for an additional 2 minutes to heat through.
Serve
Remove from heat and stir in the chopped parsley and grated Parmesan cheese. Serve immediately.
