Cake Layer

Preheat the Oven

Preheat your oven to 180°C (350°F). Grease and line a 9-inch round cake pan with parchment paper.

Melt Chocolate and Butter

In a double boiler or microwave, gently melt the dark chocolate and unsalted butter together until smooth. Allow to cool slightly.

Mix Ingredients

In a mixing bowl, combine the melted chocolate mixture with granulated sugar, and stir until well combined. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and cocoa powder until smooth.

Bake the Cake

Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let it cool completely in the pan.

Chocolate Mousse

Melt Chocolate

Melt the dark chocolate in a double boiler or microwave until smooth. Allow it to cool slightly.

Whip Cream

In a separate bowl, whip the heavy cream until soft peaks form. In another bowl, whisk together egg yolks, sugar, and vanilla extract until creamy.

Combine Mixtures

Fold the melted chocolate into the egg yolk mixture until smooth. Gently fold in the whipped cream until fully incorporated.

Chill Mousse

Pour the mousse over the cooled cake layer and refrigerate for at least 2 hours to set.

Chocolate Ganache

Heat Cream

In a saucepan, heat the heavy cream until it just begins to simmer.

Combine with Chocolate

Remove from heat and pour over the chopped dark chocolate. Let it sit for a few minutes, then stir until smooth.

Glaze the Cake

Allow the ganache to cool slightly before pouring it over the set mousse layer. Spread evenly and refrigerate until the ganache is set.
