    Prepare the Eggplant

    Slice the eggplants into 1/4 inch rounds and sprinkle them with salt. Let them sit for about 30 minutes to draw out excess moisture. Rinse and pat dry.

    Bread the Eggplant

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each eggplant slice in flour, dip in eggs, then coat with breadcrumbs.

    Fry the Eggplant

    In a large skillet, heat olive oil over medium heat. Fry the breaded eggplant slices in batches until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

    Prepare the Spaghetti

    Cook spaghetti according to package instructions. Drain and set aside.

    Assemble the Dish

    In a large baking dish, spread a layer of marinara sauce at the bottom. Layer half of the fried eggplant, followed by a layer of marinara sauce, half of the mozzarella cheese, and half of the Parmesan cheese. Repeat the layers.

    Bake

    Preheat the oven to 375°F (190°C). Bake the assembled dish for about 25-30 minutes or until the cheese is bubbly and golden.

    Serve

    Serve the eggplant parmigiana over a bed of spaghetti, garnished with fresh basil and black pepper to taste.
