Prepare the Egg Mixture

In a mixing bowl, whisk together the eggs, milk, vanilla extract, and pumpkin pie spice until well combined and slightly frothy.

Dunk the Brioche

Heat a skillet or griddle over medium heat and add 1 tablespoon of butter. Once the butter is melted, dip each slice of brioche into the egg mixture, ensuring both sides are well coated but not soaked.

Cook the French Toast

Place the coated brioche slices onto the skillet. Cook for about 3-4 minutes on each side, or until golden brown. Add more butter as necessary for cooking.

Serve

Once cooked, serve the French toast hot, drizzled with maple syrup.

Pumpkin Spiced Anglaise

Prepare the Anglaise Base

In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat.

Combine Egg Yolks and Sugar

In a mixing bowl, whisk together the egg yolks and sugar until pale and slightly thickened.

Temper the Egg Yolks

Slowly pour the hot cream into the egg yolk mixture while whisking continuously to prevent the yolks from scrambling.

Cook the Anglaise

Return the mixture to the saucepan and cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 10 minutes).

Flavor the Anglaise

Remove from heat and stir in the pumpkin puree, vanilla extract, and pumpkin pie spice. Allow to cool slightly before serving.
