Preparing the Mussels

Clean the Mussels

Rinse the fresh mussels under cold running water. Use a brush to scrub the shells and remove any beards or barnacles. Discard any mussels that are open and do not close when tapped.

Making the Aromatic Broth

Sauté Shallots and Garlic

In a large pot, heat the olive oil over medium heat. Add the finely chopped shallots and sauté until they are translucent, about 3-4 minutes. Add minced garlic and sauté for an additional minute until fragrant.

Add Liquid Ingredients

Pour in the white wine and vegetable broth. Stir in the fresh thyme, bay leaves, lemon zest, salt, and black pepper. Bring the mixture to a simmer.

Cooking the Mussels

Steam the Mussels

Add the cleaned mussels to the pot, cover with a lid, and allow to steam for about 5-7 minutes or until all the mussels have opened. Discard any mussels that remain closed.

Making the Dipping Sauce

Prepare the Dipping Sauce

In a small saucepan, melt the unsalted butter over low heat. Stir in the chopped parsley and lemon juice. Remove from heat and set aside.
