Method
Baguette Preparation
Activate the Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for about 10 minutes until foamy.
Mix the Dough
In a large mixing bowl, combine all-purpose flour and salt. Once the yeast is activated, pour it into the flour mixture. Mix until a rough dough forms.
Knead the Dough
Turn the dough onto a floured surface and knead for 10-12 minutes until smooth and elastic.
First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Shape the Baguette
After rising, punch down the dough and turn it out onto a floured surface. Divide it into two equal portions and shape each into a long baguette.
Second Rise
Place the shaped baguettes on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.
Preheat the Oven
Preheat the oven to 450°F (232°C).
Bake the Baguette
Make a few diagonal slashes on top of each baguette with a sharp knife, then bake for 20-25 minutes or until golden brown and hollow sounding when tapped.
Herb-Infused Olive Oil Preparation
Infuse the Oil
In a small saucepan, combine the extra virgin olive oil, minced garlic, rosemary, thyme, and red pepper flakes. Heat over low heat for about 10 minutes, ensuring it does not boil.
Cool and Strain
Remove from heat and let the oil cool completely. Strain out the herbs and garlic using a fine mesh strainer or cheesecloth.
Serve
Pour the infused olive oil into a small serving bowl and serve alongside the freshly baked baguette.
