    Roast the Tomatoes and Corn

    Preheat your oven to 400°F (200°C). Cut the Roma tomatoes in half and place them on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast in the oven for about 20 minutes until soft and slightly caramelized. In the last 10 minutes of roasting, add the corn kernels to the baking sheet to roast.

    Cook the Bacon

    In a skillet over medium heat, cook the chopped bacon until crispy. Remove from the skillet and let drain on paper towels.

    Assemble the Salad

    In a large bowl, combine the mixed greens, roasted garlic-Roma tomatoes, roasted corn, pickled jalapeños, pickled red onions, house-smoked turkey, and cooked bacon. Toss gently to combine.

    Sprinkle the blue cheese crumbles over the salad. Drizzle with buttermilk dressing to taste and toss again lightly to coat.
