    Prepare the Base

    In a large cast-iron pot, heat olive oil over medium heat. Add chopped onion, celery, and diced jalapeños. Sauté until vegetables are soft, about 5 minutes.

    Add Sausage and Garlic

    Slice the andouille sausage into rounds and add it to the pot. Sauté for another 5 minutes. Then, add minced garlic and sauté for an additional minute until fragrant.

    Incorporate Tomatoes and Broth

    Stir in the diced tomatoes and smoked tomato broth. Bring to a simmer.

    Add Rice and Seasonings

    Add the saffron rice, salt, black pepper, paprika, and cayenne pepper. Stir well to combine.

    Cook the Jambalaya

    Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.

    Add Seafood

    Once the rice is cooked, gently fold in the shrimp and crab legs. Cover and cook for an additional 5-7 minutes, until the shrimp are opaque and cooked through.

    Stir in the charred sweet corn and let it heat through for a couple of minutes. Adjust seasoning if necessary.
