Preparation

Tri-Tip Preparation

1. Marinate the Tri-Tip

In a bowl, combine olive oil, minced garlic, parsley, red wine vinegar, salt, and red pepper flakes. Rub this mixture all over the tri-tip roast and let it marinate for at least 1 hour or overnight in the refrigerator.

2. Grill the Tri-Tip

Preheat the grill to medium-high heat. Remove the tri-tip from the marinade and grill for about 25-30 minutes, turning occasionally, until it reaches your desired doneness. Let it rest for 10 minutes before slicing.

Chimichurri Sauce Preparation

3. Make the Chimichurri Sauce

In a food processor, combine parsley, garlic, red wine vinegar, olive oil, salt, black pepper, and red pepper flakes. Pulse until finely chopped. Set aside.

Pan Seared Polenta Preparation

4. Cook the Polenta

In a pot, bring water and salt to a boil. Gradually whisk in the polenta. Reduce heat and cook for about 30 minutes, stirring often, until thickened. Stir in butter and parmesan cheese. Spread into a greased pan and let cool. Once cooled, cut into slices.

5. Pan Sear the Polenta

Heat olive oil in a skillet over medium heat. Add polenta slices and cook until golden brown on both sides.

Grilled Halloumi Cheese Preparation

6. Grill the Halloumi

Slice the halloumi cheese and brush with olive oil. Grill for about 2-3 minutes on each side until golden and grill marks appear.

Grilled Asparagus Preparation

7. Prepare the Compound Butter

In a bowl, mix softened butter with minced garlic, chives, lemon juice, and salt. Set aside.

8. Grill the Asparagus

Toss asparagus with a little olive oil and season with salt. Grill for about 5-7 minutes until tender.

9. Serve

Top the grilled asparagus with the garlic-lemon-chive compound butter before serving.
