Preparation Directions
1. Prepare the Chicken
In a bowl, mix flour, cornstarch, salt, and pepper. In another bowl, beat the eggs and mix in buttermilk. Dip each chicken breast in the flour mixture, then in the egg mixture, and finally coat with panko breadcrumbs.
2. Fry the Chicken
Heat oil in a deep skillet to 350°F (175°C). Fry the chicken for 5-7 minutes per side until golden brown and cooked through. Once done, remove and soak in Calabrian chili oil.
3. Make the Deviled Egg Spread
Mash hard-boiled eggs in a bowl. Add mayonnaise, Dijon mustard, salt, and black pepper. Mix until smooth.
4. Make the Remoulade
In a bowl, combine mayonnaise, Dijon mustard, hot sauce, chopped capers, and parsley. Mix well.
5. Assemble the Sandwich
Spread the deviled egg spread on the bottom half of the challah roll. Add the fried chicken, then top with romaine lettuce and dill pickles. Drizzle with remoulade and close the sandwich.
6. Serve
Serve immediately with your choice of side.
