    Prepare the Ingredients

    Start by dicing the onion, celery, jalapeños, and tomatoes. Mince the garlic and prepare the corn kernels if not using canned.

    Cook the Sausage and Chicken

    In a large cast-iron pot, cook the andouille sausage over medium heat until browned. Remove and set aside. In the same pot, add the Cajun braised chicken thighs and cook until fully cooked through. Remove and set aside.

    Sauté the Vegetables

    Add the diced onion, celery, jalapeños, and minced garlic to the pot. Sauté until the vegetables are softened, about 5 minutes.

    Combine Ingredients

    Stir in the charred sweet corn, diced tomatoes, and dark roux. Mix well to combine.

    Add Broth and Meat

    Pour in the chicken broth and bring to a simmer. Add the cooked sausage and chicken back into the pot. Let it cook for about 20 minutes to meld the flavors.

    Serve Over Rice

    Serve the hot gumbo over saffron rice in bowls. Enjoy!
