Preparation Steps

  1. 1

    Prepare the Peaches

Preheat a grill or grill pan over medium heat. Cut the peaches in half, remove the pit, and brush the cut sides with a little olive oil. Grill the peaches cut side down for about 3-4 minutes until grill marks appear and they are slightly softened. Remove from the grill and let cool before slicing.

  2. 2

    Toast the Baguette

Cut the crusty baguette into bite-sized cubes. In a pan over medium heat, toast the baguette cubes until they are golden brown and crispy, about 5-7 minutes. Set aside to cool.

  3. 3

    Prepare the Vinaigrette

In a small bowl, whisk together 3 tablespoons of olive oil, the juice of 1 lemon, 1 teaspoon of honey, and a pinch of salt and pepper. Add chopped fresh herbs like basil or parsley to taste.

  4. 4

    Assemble the Salad

In a large bowl, combine the mixed greens, toasted baguette cubes, grilled peach slices, toasted pine nuts, and crumbled goat cheese. Drizzle with the lemon-herb vinaigrette and gently toss to combine.

  5. 5

    Serve

Serve immediately, garnished with additional pine nuts or goat cheese if desired.
