    Preheat the oven to 400°F (200°C). Cut the Roma tomatoes in half, place them on a baking sheet, and drizzle with olive oil. Sprinkle with salt and pepper. Roast in the oven for about 20-25 minutes until they are tender and slightly caramelized.

    In a small bowl, whisk together the white balsamic vinegar, olive oil, minced garlic, salt, and pepper until well combined. Adjust seasoning to taste.

    In a dry skillet over medium heat, toast the Spanish peanuts for about 5-7 minutes, stirring frequently, until golden and fragrant. Set aside to cool.
