Preparation and Baking

Prepare the Cream
In a saucepan, combine the heavy cream and the vanilla bean (along with the seeds). Heat over medium until just boiling, then remove from heat and let steep for 15 minutes.

Mix the Egg Yolks
In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until well combined and slightly pale in color.

Combine Mixtures
Slowly pour the warm cream into the egg mixture while continuously whisking to prevent the eggs from scrambling.

Strain the Mixture
Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any solids and the vanilla bean.

Bake
Bake for 30-35 minutes or until the edges are set but the center still jiggles slightly. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours.

Brûlée the Top
Just before serving, sprinkle a thin layer of brown sugar over the top of each custard. Use a kitchen torch to caramelize the sugar until it forms a crispy crust. If you don’t have a torch, you can place the ramekins under a broiler for a few minutes, watching carefully to prevent burning.
