Preparation Steps

    Roasting Beets

    Preheat your oven to 400°F (200°C). Wrap the beets in aluminum foil, drizzle with 1 tablespoon of olive oil, and sprinkle with salt. Roast in the oven for about 45-60 minutes or until tender. Let them cool, then peel and chop.

    Caramelizing Onions

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add sliced onions and cook slowly, stirring occasionally, until they become caramelized and golden brown, about 20-25 minutes. Set aside.

    Cooking Bacon

    In the same skillet, cook the bacon until crispy. Remove and place on paper towels to drain. Once cooled, chop into small pieces.

    Making Pesto

    In a food processor, combine the roasted beets, garlic, pine nuts, lemon juice, remaining 1 tablespoon of olive oil, salt, and black pepper. Blend until smooth and creamy.

    Spread the beet pesto sauce on a serving plate. Top with slices of fresh mozzarella, crumbled goat cheese, caramelized onions, and chopped bacon. Serve immediately.
