Ribs and Slaw

Preparation and Cooking

    Prepare the Ribs

    Preheat your oven to 300°F (150°C). Rub the baby back ribs with olive oil, salt, and pepper. Place them on a baking sheet lined with foil.

    Bake the Ribs

    Cover the ribs with another piece of foil and bake for 2.5 to 3 hours, until tender. Remove the top foil for the last 30 minutes to allow the ribs to crisp up.

    Prepare the Slaw

    While the ribs are baking, prepare the Carolina Napa slaw by combining shredded Napa cabbage, carrots, and your choice of dressing in a large bowl. Mix well and refrigerate until ready to serve.

    Fry the Garlic

    In a small pan, heat oil over medium heat. Add minced garlic and fry until golden brown. Remove from heat and drain on paper towels.

    Assemble the Dish

    Once the ribs are done, remove them from the oven and brush generously with Alabama white BBQ sauce. Serve the ribs on a bed of Carolina Napa slaw, sprinkle with fried garlic and chopped chives.
